- 1 cup canned pumpkin puree
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup mini chocolate chips (optional)
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together pumpkin puree, almond butter, maple syrup, and vanilla.
- Add oats, spices, salt, and baking soda. Stir until combined.
- Fold in chocolate chips and nuts, if using.
- Drop spoonfuls of dough onto baking sheet and slightly flatten with a spoon.
- Bake for 12–14 minutes or until edges are set.
- Let cool on pan for 5 minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. Make it nut-free by using sunflower seed butter.
