  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/3 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together pumpkin puree, almond butter, maple syrup, and vanilla.
  3. Add oats, spices, salt, and baking soda. Stir until combined.
  4. Fold in chocolate chips and nuts, if using.
  5. Drop spoonfuls of dough onto baking sheet and slightly flatten with a spoon.
  6. Bake for 12–14 minutes or until edges are set.
  7. Let cool on pan for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. Make it nut-free by using sunflower seed butter.
