- 1/2 cup plain Greek yogurt (or dairy-free alternative)
- 1/4 cup pure maple syrup
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon sea salt
- 1/2 cup coconut whipped cream (or regular whipped cream)
Instructions
- In a mixing bowl, whisk together pumpkin puree, Greek yogurt, maple syrup, pumpkin pie spice, vanilla, and salt until smooth.
- Gently fold in the whipped cream until fully combined and fluffy.
- Spoon into serving glasses and chill for at least 30 minutes before serving.
- Top with extra whipped cream and a sprinkle of cinnamon, if desired.
Notes
Use dairy-free yogurt and coconut whip for a fully vegan version. This mousse also makes a great pie filling!
