  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon

  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix pumpkin, maple syrup, melted coconut oil, vanilla, and egg until combined.
  3. Stir in oats, flour, baking soda, cinnamon, nutmeg, and salt until a dough forms.
  4. Fold in chocolate chips.
  5. Drop spoonfuls of dough onto the baking sheet and slightly flatten.
  6. Bake for 10–12 minutes or until edges are golden and centers are set.
  7. Cool on the pan for 5 minutes, then transfer to a wire rack.
