- 1 cup pumpkin puree
- 1/3 cup maple syrup or honey
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 egg
- 1 1/2 cups old-fashioned oats
- 3/4 cup whole wheat flour (or oat flour)
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix pumpkin, maple syrup, melted coconut oil, vanilla, and egg until combined.
- Stir in oats, flour, baking soda, cinnamon, nutmeg, and salt until a dough forms.
- Fold in chocolate chips.
- Drop spoonfuls of dough onto the baking sheet and slightly flatten.
- Bake for 10–12 minutes or until edges are golden and centers are set.
- Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
Store in an airtight container for up to 5 days or freeze for longer storage. You can use dairy-free chocolate chips for a vegan version.
