- 1/2 cup pumpkin puree
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup maple syrup or honey
- 1/4 cup unsweetened cocoa powder
- 1/4 cup almond flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a small square baking dish with parchment paper.
- In a medium bowl, mix together the pumpkin puree, almond butter, maple syrup, and vanilla until smooth.
- Add cocoa powder, almond flour, baking soda, and salt. Stir until fully combined.
- Fold in chocolate chips if using. Spread the batter evenly in the prepared pan.
- Bake for 20–25 minutes or until a toothpick comes out mostly clean.
- Let cool before slicing. Store in fridge for up to 5 days.
Notes
For extra richness, add a handful of walnuts or swirl in a little extra nut butter before baking.
