Ingredients

  • 1/2 cup plain Greek yogurt
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • Optional: 1/4 cup dark chocolate chips or chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together pumpkin, eggs, Greek yogurt, maple syrup, and vanilla until smooth.
  3. Add flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until just combined.
  4. Fold in chocolate chips or nuts if using.
  5. Divide batter evenly into muffin cups and bake for 18–22 minutes or until a toothpick comes out clean.
  6. Cool in pan for 5 minutes, then transfer to a wire rack.
