These Healthy Greek Yogurt Pumpkin Muffins are naturally sweetened, packed with protein, and incredibly moist—perfect for a cozy fall breakfast or snack.

- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- Optional: 1/4 cup dark chocolate chips or chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together pumpkin, eggs, Greek yogurt, maple syrup, and vanilla until smooth.
- Add flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until just combined.
- Fold in chocolate chips or nuts if using.
- Divide batter evenly into muffin cups and bake for 18–22 minutes or until a toothpick comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack.
Notes
Store in an airtight container for up to 4 days, or freeze for up to 2 months. Great for meal prep and lunchboxes!
