- 1 lb boneless, skinless chicken breasts, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1/2 red onion, sliced
- Juice of 1/2 lemon
- Fresh parsley, chopped (for garnish)

- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with paprika, Italian seasoning, salt, and pepper.
- Add chicken to the skillet and cook 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Add broccoli, bell pepper, zucchini, and red onion. Cook 4–5 minutes until tender-crisp.
- Return chicken to the skillet and toss everything together.
- Squeeze lemon juice over the top and cook 1–2 minutes more.
- Garnish with fresh parsley and serve hot.
Notes
You can swap vegetables based on what you have on hand, such as green beans or carrots. Serve on its own or over rice, quinoa, or cauliflower rice for a complete meal.
