- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil or butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- Optional: 1/4 cup chocolate chips or chopped nuts

- Preheat oven to 350°F (180°C) and line a muffin tin with paper liners or lightly grease.
- In a large bowl, mix mashed bananas, milk, honey, melted coconut oil, and vanilla until smooth.
- In a separate bowl, combine oats, baking powder, baking soda, salt, cinnamon, and optional mix-ins.
- Stir dry ingredients into wet ingredients until just combined.
- Divide batter evenly among muffin cups.
- Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Add a scoop of protein powder for extra protein.
