Description

These Hawaiian Chicken Skewers bring tropical flavor straight to the grill! Juicy marinated chicken, sweet pineapple, and crisp bell peppers are threaded onto skewers and char-grilled to perfection for a fun and colorful summer dinner.


Ingredients

  • lbs boneless skinless chicken thighs or breasts, cut into 1.5-inch chunks
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1.5-inch pieces
  • 1 green bell pepper, cut into 1.5-inch pieces
  • Skewers (wooden or metal)

For the Marinade:

  • ¼ cup soy sauce
  • ¼ cup pineapple juice
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon sesame oil (optional)
  • Salt & pepper, to taste

Instructions

  1. Soak Skewers (if wooden): If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Make the Marinade: In a bowl, whisk together soy sauce, pineapple juice, honey, vinegar, garlic, ginger, sesame oil, salt, and pepper.
  3. Marinate the Chicken: Place chicken in a bowl or zip-top bag and pour in the marinade. Refrigerate for at least 30 minutes, up to 8 hours.
  4. Assemble Skewers: Alternate chicken, pineapple, and bell peppers on the skewers.
  5. Grill: Preheat grill to medium-high. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  6. Serve: Garnish with green onions or sesame seeds if desired. Serve with rice, salad, or grilled veggies.

Notes

You can use canned pineapple in juice if fresh isn’t available. For extra caramelization, brush skewers with remaining marinade during the last few minutes of grilling (boil it first if using raw chicken marinade).
