Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, cut into chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 cups pineapple chunks (fresh or canned)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Sesame seeds, for garnish
  • Green onions, sliced for garnish
  • Sauce:
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch + 1 tbsp water (optional, for thickening)

Instructions

  1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment.
  2. Arrange chicken, bell peppers, onion, and pineapple evenly on the pan.
  3. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  4. In a small bowl whisk together pineapple juice, soy sauce, brown sugar, garlic, vinegar, and ginger.
  5. Pour half the sauce over the chicken and veggies.
  6. Roast for 20–25 minutes, stirring halfway through, until chicken is cooked and veggies are tender.
  7. If you want the sauce thicker, simmer the remaining sauce with cornstarch slurry for 2–3 minutes.
  8. Drizzle remaining sauce over the sheet pan and garnish with green onions and sesame seeds.
  9. Serve over rice for a complete meal!

Notes

💡 Tip: Want extra caramelization? Broil the last 2 minutes! Also great for meal prep—divides perfectly into 4 servings.
