Description

  • Ingredients required for cake mix (usually eggs, oil, water)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Red gel food coloring (optional, for vampire bite effect)
  • Mini chocolate chips or candy eyes for decoration

Instructions

  1. Preheat oven as directed on cake mix box. Line muffin tin with cupcake liners.
  2. Prepare red velvet batter according to instructions and fill liners 2/3 full.
  3. Bake according to package directions or until a toothpick comes out clean. Cool completely.
  4. Make cream cheese frosting: beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until fluffy.
  5. Core a small hole in each cupcake and fill with cream cheese frosting. Top with remaining frosting.
  6. Use red gel or drizzle to create vampire bite marks on frosting. Add chocolate chips or candy eyes if desired.

Notes

For extra effect, use a piping bag for precise vampire bite marks. You can make these ahead and refrigerate until serving.
