- ½ small red onion, thinly sliced

- For the balsamic dressing:
- 3 tablespoons olive oil

- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup

Instructions
- Grill Chicken: Season chicken breasts with salt and pepper. Grill over medium heat for 6–7 minutes per side, until cooked through. Let rest, then slice.
- Grill Peaches: Brush peach halves with olive oil. Grill cut-side down for 2–3 minutes, until caramelized. Slice into wedges.
- Make Dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, mustard, honey, salt, and pepper.
