- 1 1/2 lbs chicken breasts or thighs
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 1 tbsp red wine vinegar
- 3 cloves garlic, minced
- 1 tsp oregano
- 1/2 tsp paprika
- Salt & pepper, to taste
- 2 cups cooked rice (white, brown, or lemon rice)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/3 cup red onion, thinly sliced
- 1/2 cup kalamata olives
- 1/2 cup feta cheese, crumbled
- 1 cup tzatziki sauce
- Fresh parsley or dill, for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, paprika, salt, and pepper.
- Add the chicken and marinate for at least 30 minutes (or up to 4 hours for best flavor).
- Heat a skillet over medium-high heat and cook the chicken for 5β6 minutes per side, until golden and cooked through.
- Let rest for 5 minutes, then slice.
- Assemble bowls: add rice to each bowl, then top with chicken, tomatoes, cucumbers, red onion, olives, and feta.
- Drizzle with tzatziki and garnish with parsley or dill.
- Serve immediately or refrigerate for meal prep.
