- 1 lb (450g) boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup tzatziki sauce
- Fresh parsley or dill, for garnish

- In a bowl, combine olive oil, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 15 minutes.
- Heat a skillet over medium-high heat. Cook chicken 5–7 minutes per side, or until fully cooked and golden brown.
- Slice chicken into strips.
- Assemble bowls with rice or quinoa as base. Top with chicken, cherry tomatoes, cucumber, red onion, olives, and feta.
- Drizzle with tzatziki sauce and garnish with fresh parsley or dill.
- Serve immediately or store in meal prep containers for up to 3 days.
Notes
For extra flavor, marinate chicken for several hours or overnight. You can also add roasted peppers or artichoke hearts for a Mediterranean twist.
