  • 1 lb (450g) carrots, peeled and sliced into 1/4-inch rounds
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar or maple syrup
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp fresh thyme or parsley for garnish (optional)
  • 12 tbsp water, if needed

Instructions

  1. Prepare carrots: Peel and slice carrots into 1/4-inch thick rounds.
  2. Cook carrots: In a large skillet over medium heat, melt butter. Add brown sugar, salt, and pepper. Stir until combined.
  3. Glaze: Add carrots and toss to coat in the butter-sugar mixture. Cover and cook for 8–10 minutes, stirring occasionally. Add 1–2 tbsp water if carrots need more moisture to cook through.
  4. Finish: Remove lid, increase heat slightly, and cook for 2–3 minutes until glaze is slightly thickened and carrots are tender.
  5. Serve: Garnish with fresh thyme or parsley and serve warm.

Notes

You can substitute honey or maple syrup for brown sugar for a different flavor. For a richer taste, add a pinch of cinnamon or nutmeg to the glaze.
