Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt in a medium bowl.
- Cream butter and brown sugar in a large bowl until light and fluffy.
- Add egg, molasses, vanilla, and instant espresso powder; mix until smooth.
- Gradually add dry ingredients to wet ingredients until a soft dough forms.
- Roll dough into 1–1.5 tbsp balls and place on prepared baking sheets, spacing 2 inches apart.
- Bake for 9–11 minutes, until edges are set but centers remain soft.
- Cool 5 minutes on baking sheet, then transfer to wire rack to cool completely.
- Optional: Drizzle with melted white chocolate or sprinkle with sugar for decoration.
