- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup molasses
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/4 cup granulated sugar, for rolling
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter and brown sugar until light and fluffy.
- Mix in molasses and egg until smooth.
- In a separate bowl, whisk together flour, baking soda, salt, and spices.
- Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
- Roll dough into 1-inch balls and coat in granulated sugar.
- Place on baking sheets 2 inches apart and bake 10–12 minutes until edges are set.
- Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a stronger ginger flavor, increase ground ginger to 1 1/2 tsp. These cookies freeze well—store in airtight containers or wrap tightly for gift swaps!
