- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/3 cup granulated sugar
- 1/3 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- For rolling: 1/2 cup granulated sugar + 1/2 cup powdered sugar
Instructions
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy.
- Mix in the molasses, egg, and vanilla until smooth.
- Add the dry ingredients and mix until a soft dough forms. Chill for 1 hour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll dough into 1-inch balls. Coat first in granulated sugar, then in powdered sugar.
- Place on baking sheet and bake 9–11 minutes until crackled and set at edges.
- Cool on the baking sheet for 5 minutes, then transfer to a rack.
Notes
For extra flavor, add 1 teaspoon orange zest or dip half the cookie in white chocolate. Store in an airtight container for up to 1 week or freeze for 2 months.
