  • Salt and pepper, to taste
  • 1 cup baby spinach (optional)

Instructions

  2. Add garlic and ginger; cook for 1 minute until fragrant.
  3. Stir in turmeric and cumin, then add the cubed sweet potatoes, coconut milk, and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until sweet potatoes are tender.
  5. Stir in spinach (if using) and cook for another 2 minutes until wilted.
