- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 medium sweet potatoes, peeled and cubed
- 1 can (400 ml) coconut milk
- 2 cups vegetable broth
- 1 tsp turmeric powder
- 1/2 tsp ground cumin
- Salt and pepper, to taste
- 1 cup baby spinach (optional)
- Fresh cilantro or lime wedges, for garnish
Instructions
- Heat coconut oil in a large pot over medium heat. Add the onion and sautΓ© for 3β4 minutes until translucent.
- Add garlic and ginger; cook for 1 minute until fragrant.
- Stir in turmeric and cumin, then add the cubed sweet potatoes, coconut milk, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20β25 minutes, or until sweet potatoes are tender.
- Stir in spinach (if using) and cook for another 2 minutes until wilted.
- Season with salt and pepper to taste, and serve hot topped with fresh cilantro or a squeeze of lime juice.
