- 2 cups crushed graham crackers or digestive biscuits
- 1/2 cup melted butter
- 1 cup granulated sugar
- 6 tbsp unsalted butter (for caramel)
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1/2 tsp sea salt (plus more for topping)
- 1 package (8 oz) cream cheese, softened
- 1 cup whipped cream or whipped topping

- Prepare the crust: Mix crushed biscuits with melted butter and press into a dish. Refrigerate 15–20 minutes.
- Make the caramel: In a saucepan, melt sugar over medium heat until golden. Add butter and stir until dissolved.
- Slowly pour in heavy cream, whisking constantly. Cook 1–2 minutes until smooth and thick.
- Remove from heat and stir in vanilla and sea salt. Allow to cool slightly.
- Prepare the filling: Beat cream cheese until smooth. Add half of the cooled caramel and mix well.
- Fold in the whipped cream until fluffy and combined.
- Assemble: Spread the caramel cream filling over the chilled crust.
- Top with remaining caramel and swirl gently.
- Chill for at least 2–4 hours before serving.
Notes
For a firmer caramel layer, cook it 1–2 minutes longer. Add flaky sea salt on top right before serving for the perfect sweet–salty finish.
