- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/2 cup chicken broth
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley for garnish
Instructions
- Place halved potatoes in the bottom of the crockpot.
- Season chicken breasts with salt, pepper, and Italian seasoning, then place on top of potatoes.
- In a small bowl, mix olive oil, garlic, and Parmesan cheese. Pour over chicken and potatoes.
- Pour chicken broth around the edges of the crockpot (not over the top to keep the Parmesan on the chicken).
- Cover and cook on LOW for 6β7 hours or HIGH for 3β4 hours, until chicken is cooked through and potatoes are tender.
- Garnish with chopped parsley before serving. Serve warm with extra Parmesan if desired.
Notes
π‘ Tip: Add carrots or green beans for extra vegetables. For a creamier sauce, stir in 1/4 cup cream or cream cheese during the last 30 minutes of cooking.
