Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley for garnish

Instructions

  1. Place halved potatoes in the bottom of the crockpot.
  2. Season chicken breasts with salt, pepper, and Italian seasoning, then place on top of potatoes.
  3. In a small bowl, mix olive oil, garlic, and Parmesan cheese. Pour over chicken and potatoes.
  4. Pour chicken broth around the edges of the crockpot (not over the top to keep the Parmesan on the chicken).
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is cooked through and potatoes are tender.
  6. Garnish with chopped parsley before serving. Serve warm with extra Parmesan if desired.
