- 1 lb sirloin steak, cut into bite-sized cubes
- 1 lb baby potatoes, halved or quartered
- 3 tbsp butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried thyme or rosemary
- Salt and black pepper, to taste
- 2 tbsp chopped parsley for garnish
- Optional: red pepper flakes for a little heat
Instructions
- Parboil potatoes in salted water for 5β6 minutes until slightly tender. Drain and set aside.
- In a large skillet over medium-high heat, heat olive oil. Add steak cubes and sear for 2β3 minutes per side until browned but still tender. Remove steak from skillet and set aside.
- In the same skillet, melt butter and sautΓ© garlic until fragrant (about 1 minute).
- Add parboiled potatoes and cook for 5β7 minutes until golden and crisp, stirring occasionally. Season with salt, pepper, and herbs.
- Return steak to the skillet and toss everything together for 2β3 minutes until heated through.
- Garnish with chopped parsley (and optional red pepper flakes) and serve immediately.
Notes
