- 8 oz (225g) linguine or spaghetti
- 1 lb (450g) large shrimp, peeled and deveined
- 3 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional)
- ½ cup dry white wine or chicken broth
- Juice of ½ lemon
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley
- Grated Parmesan cheese, for serving (optional)
Instructions
- Cook Pasta: Prepare pasta according to package instructions until al dente. Drain and reserve ½ cup pasta water.
- Cook Shrimp: In a large skillet, heat 1 tablespoon butter and olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook 2 minutes per side until pink. Remove shrimp and set aside.
- Make Sauce: Add remaining butter to skillet. Sauté garlic and red pepper flakes for 1 minute. Pour in white wine and lemon juice, simmer 2-3 minutes to reduce slightly.
- Toss Pasta: Return shrimp to skillet. Add cooked pasta and toss to combine. Add reserved pasta water a little at a time to loosen sauce if needed.
- Serve: Garnish with parsley and Parmesan cheese. Serve immediately.
Notes
For a richer flavor, add a splash of heavy cream to the sauce. Swap white wine for broth to make it alcohol-free. Don’t overcook shrimp to keep them tender and juicy.
