  • 1 lb (450g) large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup dry white wine or chicken broth
  • Juice of ½ lemon
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook Pasta: Prepare pasta according to package instructions until al dente. Drain and reserve ½ cup pasta water.
  2. Cook Shrimp: In a large skillet, heat 1 tablespoon butter and olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook 2 minutes per side until pink. Remove shrimp and set aside.
  3. Make Sauce: Add remaining butter to skillet. Sauté garlic and red pepper flakes for 1 minute. Pour in white wine and lemon juice, simmer 2-3 minutes to reduce slightly.
  4. Toss Pasta: Return shrimp to skillet. Add cooked pasta and toss to combine. Add reserved pasta water a little at a time to loosen sauce if needed.

Notes

For a richer flavor, add a splash of heavy cream to the sauce. Swap white wine for broth to make it alcohol-free. Don’t overcook shrimp to keep them tender and juicy.
