  • 4 ribeye or sirloin steaks (about 8 oz each)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1/2 cup Irish whiskey
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme leaves
  • Fresh parsley, for garnish

  1. Season steaks with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear steaks for 3–4 minutes per side for medium-rare or until desired doneness. Remove and let rest.
  4. Reduce heat to medium, add butter, garlic, and shallot; sauté until fragrant, about 1–2 minutes.
  5. Carefully add Irish whiskey and simmer 1–2 minutes to reduce slightly.
  6. Add heavy cream, Dijon mustard, and thyme; simmer 3–4 minutes until sauce thickens.
  7. Return steaks to skillet, spooning whiskey cream sauce over them to coat.
  8. Garnish with fresh parsley and serve immediately with your favorite sides.

Notes

For extra flavor, let steaks come to room temperature before cooking. Adjust whiskey amount to taste, and avoid overcooking the sauce to maintain creaminess.
