Fresh Vietnamese Spring Rolls are light, healthy, and packed with crisp vegetables, herbs, and your choice of protein, all wrapped in delicate rice paper. Perfect as an appetizer or light meal with a flavorful dipping sauce.

  • 810 rice paper wrappers
  • 1 cup cooked shrimp, thinly sliced (or tofu for vegetarian)
  • 1 cup rice vermicelli noodles, cooked and cooled
  • 1 cup lettuce or mixed greens, shredded
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh basil leaves
  • 1/2 cup carrots, julienned
  • 1/2 cup cucumber, julienned
  • Optional: bean sprouts, bell pepper strips
  • Dipping Sauce:
    • 3 tbsp hoisin sauce
    • 2 tbsp peanut butter
    • 1 tsp soy sauce
    • 12 tbsp water to thin as needed

  1. Prepare all vegetables, herbs, and protein, and set out in bowls.
  2. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for 5–10 seconds until pliable. Lay flat on a clean surface.
  3. Place a small amount of lettuce, herbs, vermicelli, carrots, cucumber, and protein near the bottom third of the wrapper.
  4. Fold the sides in, then roll tightly from the bottom to encase the filling.
  5. Repeat with remaining wrappers and ingredients.
  6. For dipping sauce, whisk together hoisin sauce, peanut butter, soy sauce, and water until smooth. Adjust thickness as needed.
  7. Serve spring rolls fresh with dipping sauce on the side.

Notes

Keep a damp towel over prepared spring rolls to prevent drying out. You can add sliced avocado or bell pepper for extra flavor and texture. These rolls are best eaten fresh but can be stored in the fridge for up to 4 hours.
