Description

Ingredients

- 1 small head green cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup chopped kale or spinach
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes, no salt added
- 6 cups low-sodium vegetable broth or water
- 1 tsp turmeric
- 1 tsp dried thyme
- Freshly ground black pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic for 2–3 minutes until fragrant.
- Add carrots, celery, zucchini, and cabbage. Cook for 5 minutes, stirring occasionally.
- Add kale or spinach, diced tomatoes, and vegetable broth. Stir in turmeric, thyme, and black pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
- Serve hot, optionally garnished with fresh herbs or a squeeze of lemon.
