- 3/4 cup (150g) granulated sugar
- 2 large egg yolks
- 1 tsp vanilla extract
- 2 cups (240g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp fine sea salt (optional, depending on butter)
- For Finishing
- 1 egg yolk + 1 tsp water (egg wash)
- Coarse sugar (optional)
Instructions
- In a large bowl, cream the softened salted butter and sugar together until smooth and creamy, about 2 minutes.
- Add egg yolks and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Shape the dough into a log (about 2 inches thick), wrap tightly in plastic wrap, and chill for at least 1 hour or until firm.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Slice dough into 1/4–1/3 inch cookies. Arrange on the baking sheet.
- Brush lightly with egg wash and, if desired, sprinkle with coarse sugar.
- Bake for 12–15 minutes or until lightly golden around the edges.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use high-quality salted European butter for the richest flavor and best texture. Chilling is essential for clean slicing and perfect cookie shape. Add a pinch of sea salt on top before baking for a true French bakery touch!
