  • 3/4 cup (150g) granulated sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp fine sea salt (optional, depending on butter)
  • For Finishing
  • 1 egg yolk + 1 tsp water (egg wash)
  • Coarse sugar (optional)

Instructions

  1. In a large bowl, cream the softened salted butter and sugar together until smooth and creamy, about 2 minutes.
  2. Add egg yolks and vanilla extract, mixing until fully incorporated.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  5. Shape the dough into a log (about 2 inches thick), wrap tightly in plastic wrap, and chill for at least 1 hour or until firm.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Slice dough into 1/4–1/3 inch cookies. Arrange on the baking sheet.
  8. Brush lightly with egg wash and, if desired, sprinkle with coarse sugar.
  9. Bake for 12–15 minutes or until lightly golden around the edges.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use high-quality salted European butter for the richest flavor and best texture. Chilling is essential for clean slicing and perfect cookie shape. Add a pinch of sea salt on top before baking for a true French bakery touch!
