Description

Classic French Onion Soup with caramelized onions, savory broth, and melted cheese over toasted baguette slices. A warm and comforting soup perfect for any occasion.


Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp all-purpose flour
  • 8 cups beef broth
  • 1/2 cup dry white wine (optional)
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • 1 bay leaf
  • Baguette slices, toasted
  • 1 1/2 cups grated Gruyère or Swiss cheese

Instructions

  1. Melt butter with olive oil in a large pot over medium heat. Add onions, sugar, salt, and pepper. Cook until onions are deeply caramelized, about 30–40 minutes.
  2. Add garlic and cook for 1–2 minutes more.
  3. Stir in flour and cook for 1–2 minutes to remove raw taste.
  4. Gradually add beef broth and wine (if using), stirring constantly. Add thyme and bay leaf.
  5. Bring to a simmer and cook for 20–25 minutes. Remove bay leaf.
  6. Preheat oven broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle with grated cheese.
  7. Broil until cheese is melted and bubbly, about 2–4 minutes. Serve hot.

Notes

For a vegetarian version, substitute vegetable broth for beef broth. Gruyère can be replaced with Swiss or mozzarella cheese.
