Ingredients

- 2 cups dry orzo pasta
- 2 cups cooked chicken, shredded or diced
- 2 large onions, thinly sliced
- 3 tablespoons butter
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup shredded Gruyère or Swiss cheese
- Β½ cup shredded mozzarella cheese
- 1 teaspoon thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 375Β°F (190Β°C).
- In a skillet, melt butter and slowly caramelize onions until golden and soft.
- Add garlic and thyme, cooking 30 seconds more.
- Stir in orzo, broth, and cream. Simmer for 3β4 minutes.
- Mix in cooked chicken.
- Transfer to a greased baking dish and top with cheeses.
- Bake uncovered for 25β30 minutes until bubbly and golden.
