Description
A luxurious twist on French onion soup, this hearty version is made with tender beef short ribs, caramelized onions, and a rich broth topped with cheesy bread. Comfort food elevated to the next level.

- 2 lbs beef short ribs, bone-in
- 2 tbsp olive oil
- 4 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp all-purpose flour
- 8 cups beef broth
- 1/2 cup dry red wine
- 2 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 bay leaf
- Baguette slices, toasted
- 2 cups shredded Gruyère or Swiss cheese
Instructions
- Season beef short ribs with salt and pepper. In a large pot, heat olive oil and sear ribs on all sides until browned. Remove and set aside.
- In the same pot, melt butter and add onions, sugar, salt, and pepper. Cook, stirring often, until deeply caramelized, about 30–40 minutes.
- Add garlic and cook for 1–2 minutes. Stir in flour and cook another 2 minutes.
- Pour in red wine and deglaze the pot, scraping browned bits. Add beef broth, thyme, bay leaf, and seared short ribs back into the pot.
- Bring to a simmer, cover, and cook on low heat for 2–3 hours, until beef is tender and falling off the bone.
- Remove short ribs, shred meat, and discard bones. Return shredded beef to the soup and stir well.
- Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and cover with cheese.
- Broil until cheese is melted and bubbly, 2–4 minutes. Serve hot.
Notes
For a richer flavor, sear the short ribs well before simmering. This soup can be made a day ahead—the flavors deepen overnight.
