Description

Ingredients

  • 2 lbs beef short ribs, bone-in
  • 2 tbsp olive oil
  • 4 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp all-purpose flour
  • 8 cups beef broth
  • 1/2 cup dry red wine
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 bay leaf
  • Baguette slices, toasted
  • 2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Season beef short ribs with salt and pepper. In a large pot, heat olive oil and sear ribs on all sides until browned. Remove and set aside.
  2. In the same pot, melt butter and add onions, sugar, salt, and pepper. Cook, stirring often, until deeply caramelized, about 30–40 minutes.
  3. Add garlic and cook for 1–2 minutes. Stir in flour and cook another 2 minutes.
  4. Pour in red wine and deglaze the pot, scraping browned bits. Add beef broth, thyme, bay leaf, and seared short ribs back into the pot.
  5. Bring to a simmer, cover, and cook on low heat for 2–3 hours, until beef is tender and falling off the bone.
  6. Remove short ribs, shred meat, and discard bones. Return shredded beef to the soup and stir well.
  7. Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and cover with cheese.
  8. Broil until cheese is melted and bubbly, 2–4 minutes. Serve hot.

Notes

For a richer flavor, sear the short ribs well before simmering. This soup can be made a day ahead—the flavors deepen overnight.
