- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 potato, diced
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant and softened.
- Add carrots, celery, zucchini, green beans, broccoli, cauliflower, and potato. Cook for 5–7 minutes.
- Add diced tomatoes, vegetable broth, thyme, parsley, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
- Adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
Feel free to swap in seasonal vegetables. For a creamier soup, blend a portion of the soup before serving.
