- 1 tbsp olive oil or coconut oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp red curry paste
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 1 lb boneless, skinless chicken breast, thinly sliced
- 1 cup mushrooms, sliced
- 1 cup bell peppers, sliced
- 1 tbsp fish sauce or soy sauce
- 1 tbsp lime juice (plus wedges for serving)
- Salt, to taste
- Optional garnish: fresh cilantro, green onions, chili flakes

- Heat oil in a large pot over medium heat. Add onion and sauté 3–4 minutes until softened.
- Add garlic and ginger; cook 30 seconds until fragrant.
- Stir in red curry paste and cook 1 minute.
- Pour in chicken broth and coconut milk. Bring to a gentle simmer.
- Add chicken, mushrooms, and bell peppers. Simmer 10–12 minutes until chicken is cooked through.
- Stir in fish sauce and lime juice.
- Taste and adjust seasoning. Serve hot with desired garnishes.
Notes
For extra heat, add sliced Thai chilies or chili oil. You can also add rice noodles or jasmine rice to make the soup more filling.
