- 1/2 cup corn kernels (fresh or frozen)
- 1/4 cup sliced black olives (optional)
- 2 green onions, sliced
- 1/4 cup sour cream or Greek yogurt (optional)
- Salt and pepper, to taste

- Assemble bowls: Divide cooked rice among bowls. Top with seasoned beef, cheese, diced tomatoes, corn, olives, and green onions.
- Melt cheese: Optionally, place bowls under broiler for 1–2 minutes to melt the cheese.
- Serve: Add a dollop of sour cream or Greek yogurt if desired. Serve immediately.
Notes
For a lighter option, use lean ground turkey or chicken. Customize with your favorite taco toppings such as avocado, jalapeños, or salsa.
