Ingredients

  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until smooth.
  4. Whisk together flour, baking powder, and salt, then gradually add to wet ingredients. Mix until dough forms.
  5. Scoop dough by tablespoonfuls onto the baking sheet, spacing 2 inches apart.
  6. Bake 10–12 minutes, until edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For softer cookies, slightly underbake. Store in an airtight container for up to 5 days. Dough can be refrigerated for up to 2 days before baking.
