  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 12 oz fresh salmon, cooked and flaked
  • 1/3 cup mayonnaise
  • 2 tbsp sriracha (adjust to taste)
  • 2 oz cream cheese, softened
  • 2 green onions, sliced
  • 1/4 cup furikake seasoning
  • 1 sheet nori, cut into small strips
  • Optional toppings: avocado slices, cucumber, sesame seeds, extra sriracha

  1. Prepare the rice: Mix warm sushi rice with rice vinegar, sugar, and salt. Spread evenly in a lightly greased baking dish.
  2. Add seasoning: Sprinkle half of the furikake seasoning evenly over the rice layer.
  3. Make the salmon mixture: In a bowl, combine flaked salmon, mayonnaise, sriracha, cream cheese, and green onions. Mix until creamy.
  4. Assemble: Spread the salmon mixture evenly over the rice.
  5. Top: Sprinkle remaining furikake on top.
  6. Bake: Bake at 375°F (190°C) for 10–15 minutes until heated through and slightly golden.
  7. Serve: Garnish with nori strips, sesame seeds, avocado, or cucumber. Scoop onto nori sheets or serve over extra rice.

Notes

For extra flavor, drizzle spicy mayo or eel sauce over the top before serving. You can also substitute imitation crab or tuna for the salmon if desired.
