- 3–4 lb chuck roast
- 2 tbsp olive oil
- 4 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 packet French onion soup mix
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

- Heat olive oil in a skillet and sear roast on all sides until browned.
- Place sliced onions and garlic in the bottom of the slow cooker.
- Set the roast on top of the onions.
- Whisk together beef broth, French onion soup mix, Worcestershire sauce, thyme, and pepper, then pour over the roast.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours until fork-tender.
- Optional: Remove roast and thicken sauce with cornstarch slurry for 10 minutes on HIGH.
- Slice roast, serve with onions and gravy over mashed potatoes or rice.
Notes
For deeper flavor, caramelize onions in a skillet before adding to the slow cooker. Leftovers make great sandwiches.
