- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1/4 cup tomato paste
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups mashed potatoes (prepared or leftover)
- 2 tablespoons butter, melted (for topping)
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook ground beef and diced onion until the meat is browned and the onions are soft. Drain excess fat.
- Add garlic and cook 1 minute until fragrant.
- Stir in frozen vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 5–7 minutes until slightly thickened.
- Transfer the meat and vegetable mixture into a greased 9×13 baking dish.
- Spread mashed potatoes evenly over the top of the meat mixture.
- Drizzle melted butter over the potatoes and sprinkle shredded cheddar cheese on top, if using.
- Bake for 25–30 minutes, or until the top is golden and bubbly.
- Let cool 5 minutes before serving.
Notes
You can prepare this casserole ahead and refrigerate it, then bake when ready. Use leftover mashed potatoes to save time. For extra flavor, sprinkle paprika on top before baking. Swap ground beef with ground turkey or lamb for variation.
