- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup cashews
- 3 tbsp soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced or grated
- Salt and pepper to taste
- Optional: sliced green onions and sesame seeds for garnish

- In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
- Place chicken and vegetables on the sheet pan. Drizzle sauce over them and toss to coat evenly.
- Scatter cashews over the chicken and vegetables.
- Bake 20–25 minutes until chicken is cooked through and vegetables are tender, stirring halfway through.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
Swap cashews for peanuts or almonds if desired. Serve over steamed rice or noodles for a complete meal. For spicier flavor, add 1 tsp sriracha to the sauce.
