  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup cashews
  • 3 tbsp soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced or grated
  • Salt and pepper to taste
  • Optional: sliced green onions and sesame seeds for garnish

  2. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  3. Place chicken and vegetables on the sheet pan. Drizzle sauce over them and toss to coat evenly.
  4. Scatter cashews over the chicken and vegetables.
  5. Bake 20–25 minutes until chicken is cooked through and vegetables are tender, stirring halfway through.
  6. Garnish with sliced green onions and sesame seeds before serving.

Notes

Swap cashews for peanuts or almonds if desired. Serve over steamed rice or noodles for a complete meal. For spicier flavor, add 1 tsp sriracha to the sauce.
