- 3β4 medium sweet potatoes, peeled and thinly sliced
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream or half-and-half
- 1/2 cup milk
- 1 1/2 cups shredded cheese (cheddar or gruyere)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh thyme or parsley, for garnish
Instructions
- Preheat oven to 375Β°F (190Β°C) and lightly grease a baking dish.
- In a small saucepan, melt butter over medium heat. Add garlic and cook 1 minute until fragrant.
- Stir in cream, milk, salt, and pepper. Heat until warm but not boiling.
- Arrange half of the sliced sweet potatoes in the dish. Pour half of the cream mixture over them and sprinkle with half of the cheese.
- Repeat layers with remaining potatoes, cream, and cheese.
- Cover with foil and bake 30 minutes. Remove foil and bake another 20β25 minutes, until golden and bubbly.
- Let rest 10 minutes before serving. Garnish with thyme or parsley.
