Ingredients

  • 1 lb baby potatoes, halved
  • 8 oz fresh green beans, trimmed
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • Optional: grated Parmesan, lemon zest, fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the halved baby potatoes with olive oil, garlic, paprika, thyme, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 20 minutes.
  4. Meanwhile, toss the green beans with a drizzle of olive oil, salt, and pepper.
  5. After 20 minutes, add the green beans to the baking sheet with the potatoes.
  6. Roast another 15–20 minutes, until potatoes are golden and green beans are tender-crisp.
  7. Remove from oven and finish with Parmesan, parsley, or lemon zest if desired.

Notes

For extra crispiness, avoid overcrowding the baking sheet. You can also swap baby potatoes for Yukon Gold or red potatoes.
