  • 2 tbsp olive oil

  • 3 garlic cloves, minced
  • 4 cups vegetable or chicken broth

  • 1/4 tsp black pepper
  • 1/2 tsp ground cinnamon
  • 1/2 cup coconut milk or heavy cream
  • Optional: fresh parsley or thyme for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed butternut squash with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes until tender and caramelized.
  2. Heat remaining olive oil in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
  3. Add roasted squash, broth, and cinnamon. Bring to a simmer for 5–10 minutes.
  4. Blend the soup until smooth using an immersion blender or in batches with a countertop blender.
  5. Stir in coconut milk or cream. Serve hot, garnished with fresh herbs if desired.
