Ingredients

- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ tsp pumpkin pie spice
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together pumpkin, oil, sugars, eggs, and vanilla until smooth.
- Add flour, baking soda, salt, and pumpkin spice directly into the bowl. Gently fold together until just combined.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10–15 minutes, then remove and cool completely on a wire rack.
Notes
Optional: Add ½ cup chocolate chips or chopped nuts for extra flavor and texture.
