- 1 cup mushrooms, sliced
- 1 cup baby spinach or bok choy

- Green onions, sliced, for garnish
- Optional: chili crisp or sriracha, for serving

- Reduce heat and simmer for 6–8 minutes, until potstickers are tender and cooked through.
- Add greens: Stir in spinach or bok choy and cook 1–2 minutes until wilted.
- Serve: Ladle soup into bowls and garnish with green onions. Add chili crisp or sriracha if desired.
Notes
Use frozen potstickers straight from the freezer—no need to thaw. Add shredded rotisserie chicken or a soft-boiled egg for extra protein. Soup is best enjoyed fresh but can be stored up to 2 days.
