Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 potato, diced
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened and fragrant.
  2. Add carrots, celery, zucchini, green beans, broccoli, cauliflower, and potato. Stir and cook for 5–7 minutes.
  3. Pour in vegetable broth and season with thyme, parsley, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20–25 minutes, or until vegetables are tender.
  5. Adjust seasoning as needed. Serve hot, garnished with fresh parsley.

Notes

Feel free to swap in your favorite seasonal vegetables. You can also blend a portion of the soup for a creamier texture.
