- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 potato, diced
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened and fragrant.
- Add carrots, celery, zucchini, green beans, broccoli, cauliflower, and potato. Stir and cook for 5–7 minutes.
- Pour in vegetable broth and season with thyme, parsley, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20–25 minutes, or until vegetables are tender.
- Adjust seasoning as needed. Serve hot, garnished with fresh parsley.

Feel free to swap in your favorite seasonal vegetables. You can also blend a portion of the soup for a creamier texture.
