- 3 large yellow onions, thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef or vegetable broth
- 1/4 cup dry white wine (optional)
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- 8 oz pasta (your choice)
- 1 cup shredded Gruyère or Swiss cheese
Instructions
- Melt butter with olive oil in a skillet over medium heat. Add onions, sugar, salt, and pepper. Cook until onions are caramelized, about 15–20 minutes.
- Add garlic and cook for 1–2 minutes more.
- Pour in broth and wine, add thyme, and simmer for 5–10 minutes.
- Cook pasta according to package instructions and drain.
- Combine pasta with the onion broth mixture. Transfer to serving bowls and top with shredded cheese.
- Optional: broil briefly until cheese is melted and bubbly. Serve hot.
Notes
You can add cooked chicken or mushrooms for extra protein. Use gluten-free pasta if desired.
