These Easy Peanut Butter Oatmeal Cookies are soft, chewy, naturally rich in peanut butter flavor, and incredibly simple to make. With just a few pantry staples, you’ll have a batch of wholesome, delicious cookies ready in minutes!

- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup old-fashioned rolled oats
- 1/2 cup chocolate chips (optional)

- Chopped peanuts
- White chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
- Mix in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add dry ingredients to the wet mixture and stir until just combined.
- Fold in the rolled oats and optional chocolate chips.
- Scoop dough into tablespoon-sized balls and place on the baking sheet.
- Gently flatten each cookie with your palm or the back of a spoon.
- Bake 9–11 minutes until lightly golden around the edges but soft in the center.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For chewier cookies, slightly underbake them. Add raisins or chopped nuts for texture. Store in an airtight container for up to 5 days or freeze for 2 months!
