- 4 cups fresh or frozen peaches, peeled and sliced
- 1 cup fresh or frozen raspberries
- 1/2 cup granulated sugar (plus 1 tbsp for topping)
- 1 tsp vanilla extract
- 1 tsp lemon juice

- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted

- Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
- In a bowl, combine peaches, raspberries, 1/2 cup sugar, vanilla extract, and lemon juice. Toss gently and pour into the prepared dish.
- In another bowl, whisk together flour, baking powder, and salt. Stir in milk and melted butter until just combined to form a batter.
- Drop spoonfuls of batter over the fruit evenly. Sprinkle the top with 1 tbsp sugar.
- Bake for 35–40 minutes, until topping is golden and fruit is bubbly.
- Let cool slightly before serving. Serve warm with optional vanilla ice cream.
Notes
For extra flavor, add 1/2 tsp cinnamon or nutmeg to the batter. Can be made with frozen fruit—no need to thaw. Leftovers can be refrigerated for 2–3 days and reheated gently.
