  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted

  2. In a bowl, combine peaches, raspberries, 1/2 cup sugar, vanilla extract, and lemon juice. Toss gently and pour into the prepared dish.
  3. In another bowl, whisk together flour, baking powder, and salt. Stir in milk and melted butter until just combined to form a batter.
  4. Drop spoonfuls of batter over the fruit evenly. Sprinkle the top with 1 tbsp sugar.
  5. Bake for 35–40 minutes, until topping is golden and fruit is bubbly.
  6. Let cool slightly before serving. Serve warm with optional vanilla ice cream.

Notes

For extra flavor, add 1/2 tsp cinnamon or nutmeg to the batter. Can be made with frozen fruit—no need to thaw. Leftovers can be refrigerated for 2–3 days and reheated gently.
