Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, diced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 8 oz penne or rotini pasta (uncooked)
- 1 cup grated Parmesan cheese
- 1/4 cup chopped parsley (for garnish)
Instructions
- Cook chicken: In a large skillet or pot, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning, and sauté until browned and cooked through. Remove and set aside.
- Sauté garlic: In the same pan, add garlic and cook for 1 minute until fragrant.
- Add liquids & pasta: Pour in chicken broth and milk. Stir in uncooked pasta and bring to a boil.
- Simmer: Reduce heat to low, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
- Add cheese & chicken: Stir in Parmesan cheese and return cooked chicken to the pot. Cook for 2–3 minutes more until creamy and heated through.
- Serve: Garnish with parsley and more Parmesan if desired. Serve hot and enjoy!
Notes
Use rotisserie chicken for a shortcut, or add baby spinach for extra greens. This dish can also be made in an Instant Pot using the sauté and pressure cook functions.
