- 1 lb ground beef (or turkey)
- 1 medium onion, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 cans (14.5 oz each) diced tomatoes
- 6 cups beef broth (or chicken/vegetable broth)
- 1 cup small pasta (elbow, ditalini, or shells)
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- 1 tsp salt (to taste)
- 1/2 tsp black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
- Add onion, carrots, celery, and garlic. Sauté for 5 minutes until softened.
- Stir in diced tomatoes, beans, corn, broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes to let flavors develop.
- Add pasta and cook until tender, about 10–12 minutes.
- Taste and adjust seasonings as needed. Serve hot, garnished with fresh parsley.
