  • 1 lb boneless, skinless chicken breast, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or basil for garnish
  • Lemon wedges for serving

  2. Add chicken slices, season with salt and pepper, and cook 5–6 minutes until golden and cooked through.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in bell pepper, zucchini, and red onion. Cook 4–5 minutes until tender-crisp.
  5. Add cherry tomatoes, oregano, and paprika. Cook 2 more minutes.
  6. Remove from heat and stir in olives.
  7. Top with crumbled feta and fresh herbs.
  8. Serve warm with lemon wedges.

Notes

Serve over rice, quinoa, or with warm pita bread. You can also add spinach at the end for extra greens.
