- 1/4 cup fresh lemon juice (about 1–2 lemons)
- 1 tsp lemon zest
- 1/2 cup chicken broth
- 1 tsp dried thyme or Italian seasoning
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- Optional: chopped parsley for garnish

- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt, pepper, and thyme. Sear chicken 3–4 minutes per side until golden brown.
- Reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant.
- Add lemon juice, lemon zest, and chicken broth. Bring to a simmer.
- Cover and cook for 5–7 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
- Remove chicken and let rest for a few minutes. Spoon sauce over chicken.
- Garnish with chopped parsley and serve with rice, pasta, or vegetables.
Notes
For extra flavor, add a splash of white wine to the sauce. You can also cook this in a crockpot on low for 3–4 hours for a hands-off version.
